Mid Week “Meal Prepping” by Clean Kitchen.

One crucial strategy we teach in the Clean Kitchen 12 Week Challenge is figuring out your “emergency meals.” We have clients pick out a restaurant they know they can meet their CK Meal Habits without question, or more importantly, not at risk of going through the drive thru when they are tired, hungry and stressed. This is why we absolutely LOVE The Salad Station. It takes all the pressure off when you are surrounded by so much nutrients!

Salad Station is an awesome way to do a “mini meal prep” for days that you are on the go. They make it quick and easy to pop in and make several meals that will help you stay on track with your healthy eating habits when you don’t have the time to cook yourself. For me, Wednesday’s are always hard for me. It’s the middle of the week and we have a busy schedule with church and activities so that is a the day I rely on Salad Station to get me through the hectic day!

My all time “go to” for any day of the week, and what I usually have for lunch, is my Kale Yeah Salad. And guess what? I actually thought I hated kale. That is until this salad. I am more of a “warm veggie” eater, but I literally eat this salad weekly, and most time multiple time per week.

Kale Yeah - AKA: The Iron Absorber

I nicknamed it the “Iron Absorber” because did you know kale and spinach are packed with iron, but you may not absorb it like you think you are? This is why I pair it with citrus from the oranges and the Salad Station Lemon Parm Vinaigrette Dressing. Citrus helps your body absorb the iron from the food.

So, if I have my Kale Yeah Salad for lunch, what about dinner? Hot veggies are my jam, and for dinner I need something warm and comforting! But what if I do not want to go to the grocery store for all the ingredients? So why not gather the ingredients at Salad Station I need to make a Zoodle Ramen Bowl? YES please! I just “meal prep” gather all the ingredients I want to use and save for later! Saves time, mental credits AND money by not having to go to the store, chop all the veggies, cook the meat, ect. #winning.

Zoodle Ramen Bowl

Zoodle, hot garlic herb chicken, shrimp or roasted chicken, green onion, boiled egg, mushrooms, spinach, carrots, soy sauce, cilantro, avocado, add broth at home.

The only add in at home you will need is some vegetable of chicken broth to heat everything up in. BAM. Dinner DONE! You can also mix all these ingredients in store for an Asian Zoodle Bowl, just without the broth. It is delicious both ways.
